The truffle to the fore
From November to March, Saint-Jean-d’Angély welcomes a truffle market for amateurs and fans of the precious black diamond. In the market, truffle farmers from Charente-Maritime and neighbouring départements lay out their Tuber melanosporum, the black truffle of Périgord. The tuber is weighed and examined from every angle; quality and flavour are measured in its perfume, size and marbling.
On the mushroom podium, the truffle is the irresistible king. It’s THE ingredient for concocting refined dishes that will amaze your family at Christmas or seduce your other half at a St Valentine dinner. At the market you can also learn more about its discovery at the foot of certain species of tree and on the technique (“cavage”) for searching and harvesting that depends solely on the nose of a specially trained dog or a pig.
